Lemon Blueberry Drop Cookies

So, every weekend I make cookies and bring them into work. And since I’m the only girl in a construction trailer full of guys, the cookies make me quite popular.

And having recently been prompted for a recipe, and being in dire need of something to post on this damn blog, I figure the least I can do is share my culinary concoctions with the rest of the world.

This recipe is of my own making, and I haven’t actually tried a cookie yet (they’re all in the little box that I use for cookie day) so they could be horrible. Proceed at your own risk.

    Lemon Blueberry Drop Cookies

¼ c butter
¾ c sugar
1 egg
½ tsp vanilla
1 tbsp lemon juice
1 tsp lemon zest
2 c flour
¼ tsp salt
1 ½ tsp baking powder
¾ c blueberries

–Cream the butter and sugar. Add the egg, vanilla, lemon juice and zest and mix well.
–In a separate bowl, combine one and a half cups of flour, the baking powder and salt. Mix this into the batter.
–In that separate bowl you just emptied, combine the last half cup of flour with the blueberries, making sure they’re all coated. Gently mix this into the rest.
–Keep in mind that overworking blueberries makes them turn a weird green colour; you really need to be gentle.
–Drop by tablespoonful onto a parchment lined baking sheet.
–Bake at 350 F for 12-15 minutes. The edges should be just starting to brown, but the tops will still be quite pale.

Because the tops are quite pale they really need something a little extra on them.

    Glaze

–Combine ~2-3, maybe 4 tbsp of lemon juice (the rest of the lemon after the 1 tbsp above has been used) with 1-2 cups of icing sugar mixed into it until it’s no longer runny, but not quite spreadable either.
–When the cookies have cooled, set them close together on the parchment that had lined the cookie sheet and drizzle the glaze over them.
–Immediately move them to another sheet of parchment or a rack (if you have one you feel like washing) and let the glaze set.

This recipe makes 2 dozen cookies and way more glaze than you’ll need, but it keeps. It’s not so good right off the spoon. (Of course I tried it. Are you trying to say you wouldn’t?)
